  • ·Extra full kegs go in commissary walk-in, labeled and dated.

Batch Recipe — Per Keg
4 LWater
3 LEvan Williams Bourbon
1.5 LStrained OJ (subject to change)
1 LFresh lemon juice
1 LHouse orgeat (almond)
500 mlFrangelico (hazelnut)
500 mlHibiscus syrup

Combine all. Shake well in keg. Label & date. Strain OJ before adding — pulp clogs keg lines.

House Orgeat
4 LSimple syrup
¼ tspAlmond extract
  1. Combine in container.
  2. Blend until fully incorporated.
  3. Bottle, label, and date.
Keg Care & Storage
  1. Pull tab to release residual gas.
  2. Remove lid from keg.
  3. Lid only goes through the bar dishwasher — not the keg body.
  4. Rinse the keg interior thoroughly with the BOH dishpit sprayer.
  5. Replace lid. Stage for next-day prep fill.
