Bourbon is an American whiskey made from a mash that's at least 51% corn, then aged in new charred oak barrels — that char is where bourbon gets its caramel, vanilla, and toasty flavors. Every whiskey starts with a "mash bill" (the grain recipe), and that recipe is the biggest reason different whiskeys taste so different from each other.
