Build Spec — Single Drink

Method: Shake with Ice · Double Strain · Rocks Glass · Pebble Ice

2 oz	Batch rum blend
¾ oz	Lychee Orgeat
¾ oz	Fresh lime juice
— shake with ice · double strain into rocks glass —
— fill to/just over brim with pebble ice —
garnish	Slap mint · serve with straw

Notes for the Bar

·Slap the mint firmly between your palms before garnishing to release the aromatics — this drink leans on that nose.
·Lychee is a small, sweet Asian fruit with a floral, grape-like flavor and a slight rose perfume. That's the distinct soft sweetness guests will notice right away.
·vs. a classic Mai Tai: A traditional mai tai uses orgeat with aged rum — ours swaps in lychee orgeat for a softer, more floral sweetness and layers multiple rums for more depth and proof.
·Tree nut allergy — orgeat is almond-based. Always confirm with the guest before building.

Batch Blend — Rum Blend

1200 ml	Bacardi Añejo
750 ml	Plantation Overproof OFTD
750 ml	Bols Orange Curaçao
350 ml	Smith & Cross Rum

Steps

Combine all four components in the ratios above.
Stir to incorporate.
Bottle, label, and date.

Lychee Orgeat

~2 L	Lychee boba syrup (approx. 1 container)
~2 L	Commissary orgeat (equal parts — match to container)

Steps

Empty one full container of lychee boba syrup into a blending container. Boba containers hold approx. 2 L — match orgeat to whatever's in the container.
Add equal parts commissary orgeat.
Blend until fully incorporated.
Bottle, label, and date.
