Tequila is made from the blue agave plant, primarily in and around Jalisco, Mexico. The agave heart (piña) is roasted, crushed, fermented, and distilled. Look for "100% agave" on the label — that means nothing but agave was used, versus "mixto" tequilas that are cut with other sugars. The aging process after distillation is what creates the three styles we carry.

Unaged, or aged less than two months. Bottled shortly after distillation — bright, peppery, vegetal. The purest expression of agave flavor.
"Rested" — aged 2–12 months in oak barrels. Picks up light caramel, vanilla, and spice notes while keeping its agave backbone.
"Aged" — at least 1 year in oak, often longer. Richer, smoother, and more whiskey-like, with deep caramel, oak, and dried fruit notes.
