  • ·When a pitcher runs out, send it to dish and pull the next one from the fridge.
  • ·Oat milk only — no substitutions. We don't serve this without it.

Thai Tea Concentrate — Batch
Materials
10 qts Water
2 bags ChaTraMue loose-leaf tea (large bags)
3 qts Sugar
1 Cone filter for straining
Steps
  1. Bring 10 qts of water to a full boil.
  2. Add 2 large bags of ChaTraMue tea. Steep exactly 5 minutes — no longer. Over-steeping intensifies flavor beyond spec.
  3. Strain immediately through a cone filter while hot. Work fast.
  4. Add 3 qts of sugar while still hot. Stir until fully dissolved.
  5. Place tea in pitchers ready for service, labeled and dated.
