Why yu choy works

Yu choy is a Chinese leafy green with tender stalks and small yellow flowers. It has a slight peppery, mustard-green bite and natural sweetness - less bitter than broccoli rabe and more delicate than mustard greens.

The whole plant is edible: stalk, leaf, and flower bud. It stays tender when wok-fried and takes on a glossy, savory finish.
